So, I think it's time to build another rig...

Budget: ~2500 USD ABSOLUTE MAX, ideal would be low 2000s
More specific use (what games, what programs): Just you're everyday gaming like PoE, WoW, Divinity Original sins 2, Destiny 2 etc.
Planned time until purchase: End of the month latest. ~around October 20th.
Do you need an Operating System?: Win 10
Do you have any specific preferred components?: Coffee Lake 8700k + EVGA 1080 Ti are my only two must haves for right now.
Do you need a sound or wireless card?: I usually just plug my ethernet cable to the mobo, never had issues in the past.
Do you want stock cooling or do you plan on overclocking?: Prob gonna do something like 4.6Ghz OC, mild and a H100 v2 seems like a good start.
Do you need a monitor? mouse? keyboard?: I got extra mouse / keyboard, headset. I just need a new monitor. Preferably 166hz 1ms. (Do they even have 4k at 166hz 1ms these days yet?)
Zip code/location? (Shipping costs): I live in New Jersey, USA. There is a microcencer really close to me and a major Newegg shipping warehouse!

So yea, to keep it simple, just need something solid to replace one of my gaming rigs. (The rig being replaced is pretty old, but still maxes most games to be honest). Do u guys think it has some real resale value? (built in 2012 If i remember correctly)
Components:

2x GTX 680tis in SLi
3930k (oldest gen im assuming)
asus p9x79 deluxe mobo
G-skill ripjaws 16gb forgot the speed gotta check after work when im home
512gb M4 crucial SSD

Gonna make one for your a bit later this month when the 8700k has been released.

Go for a 165hz IPS monitor instead!
144hz 4k is a thing soon.

Yea, the monitor is my only budget concern at the moment.... I feel like they can get way too pricey specially with the good specs. I don't really expect a realistic high end monitor to fit in the budget. I have a monitor as well, but I wanted to upgrade since its also a 2012 27inch asus one.

I;'m assuming the 8700K is gonna be around $350. So if you wanna just assume that and build one before the end of the month, that would be really solid. I want to start ordering stuff as soon as I can. Do you think it would be worth delaying a monthish + for black friday / holidays season? How much potential savings could we be talking about?

Just get cpu/Mobo from microcenter if you're worried about savings. Not worth to wait if you need a new PC. I've done it lol
