Currently in the process of building a new store for family business and I want to run cameras and build the server myself.

I will be running Linux on this platform. Will have maybe 10-12 cameras at the most. Any advice or help would be great. I would dump the camera feed every week on a certain day so don't need to hoard the video.

Will need some camera options if anyone has dealt with any of this. I have few options in mind but will hold off posting those right now.

Computer Specs:
Thinking 1-2TB HD
256GB SSD
Processor - AMD or Intel?
Ram - 8gb be enough perhaps?
Motherboard - ?

Any help would be greatly appreciated.

Budget???

Sorry forgot that, I would say 500-750 would be a decent budget but can go up to 1,000 if possible.

2TB isn't going to last you an entire week. Especially with 12 1080p cameras.

Just but a NVR like a normal person. PC solutions are buggy and don't work very well.
