Using following applications:

Revit
AutoCAD
Rhino
SketchUp
V-Ray

Would this build suit this?

i7-6700
Z170-K Asus
4x8GB DDR4 2400mhz 14-16-16-31 corsair
RM750i psu
850 evo ssd

Video Card..

Do I want to use a quadro card?

I'm not 100% sure but a Quadro or maybe Titan Z would be your best bet. Also, for the price, I would recomend a 5930K and X 99 motherboard for quad channel rather than dual. Dual only gives 10^ higher performance than single amd Quad gives your roughly 30% more.

For autoCAD definitely

for sketchup, no

honestly drop sketchup because if you start doing high quality you'll want to kill yourself with render time + lag duing use, it's built like shit.
