I'm newer to building PCs, I just put everything together and was installing windows on my SSD, and I forgot to "partition" it which is what the guy on new egg youtube video did. Is this going to mess anything up? If so how do I delete windows, and start over from scratch?

yep.

and if it was a new ssd there won't be any partitions anyways so you are just fine.

Yeah it was a brand new ssd, and on the video he hit partition where I just clicked it and hit next.. so was making sure that wouldn't mess anything up

Unless your SSD is 250-256GB or less, you don't need to partition it. ;)

Be sure to leave enough free space for TRIM or whatever your drive uses, so that it won't have slow writes.
