Do you have any specific preferred components?: I really like the NZXT H440 case.
Do you need a bigger monitor? mouse? full keyboard?: I need keyboard/mouse and 2 or 3 monitors

As for the peripherals, I'll leave you to pick ones you like. They greatly fall under a preference category.

These are good monitors? Also wouldnt sli 970s be better?

2x 970 SLI would perform slightly better than a single 980 but would cost you $100 more before tax.

Well yeah, of course its going to be much better performance running 3 1080p monitors in surround mode. With just two standalone monitors, the performance gain is negligible since a single 980 will run any game on the market at ultra settings on 1920x1080.

Anyway:
GTX 980 = In budget
2x GTX 970 = Over budget

OP stated he wanted no more than $2500 with tax, installation, and shipping.
However, if you can swing the extra $130 or so and get two 970s instead, definitely do so.
