obviously the ryzen7 5800x3d is the best choice for gaming and overall the best choice for am4. all 3 of your options will do fine for your tasks. if you want to use your computer for more work related tasks and rendering/editing then the 5950x would be the best choice.
ddr4 3600mhz is the sweet spot for am4 so you dont need to go any higher.
there is no need to go to am5 unless the price is comparable or unless you have to have the top of the line current gen components with highest bandwidths. am5 will give you pcie 5.0 speeds and ofc supports ddr5.

having shoped heavily for a gpu recently to upgrade from my 3080ti, i ended up geting my first AMD gpu (after 5-6 nvidia in a row - just based on rep...)
from now on i highly recommend getting more perf (/or save money) by going AMD gpu over nvidia
as for your cpu the choice is ez to me on am4 : 1 AMD Ryzen 9 5950X (forget the recent 5900XT - at least at current prices)
** 5800X is a nice money saver too if you don't plan on having 8x d2 instances up or multitask / video edit a lot. thats money better spent on your GPU if u play one game at a time.
*** on x570 make sure to go to bios and use XMP (or DOCP for asus) to set your memory timings right.
*** and enable SAM after you put in your next GPU. (in bios too)
for memory, imo, you want to have the lowest CL (faster response), more than you want higher mhz(faster loading)
so #1 is best with 16CL over 19CL of #2.
+ you save money.
+ your board likely woud'nt reach 4400 or strait up not reconize #2
