Case don't matter, lets be clear, its a metal box that holds shit, if you were really strapped I'd tell you not to buy a case at all if I'm being honest.
The PSU sounds wasteful cause plat, but 600 watts is a nice place to be at for future upgrades.

Also i have been wondering how much differences it is between 16GB 2666 vs 3000 vs 3200?

For intel buy 3200 cause lets be honest you'll upgrade cpu later otherwise why even buy a z370 board.

This I just put together and seems to work just fine
