Okay thanks for the advice. She wouldn't be upgrading anything after the purchase as she doesn't do much intensive stuff anyways. The only things she'd do on the sides while actively playing minecraft would be youtube/twitch stream.

If I were to reuse her current i3/H81 mobo and add in a GPU + upgrade RAM/SSD do you think it would work? I can get exact specs tomorrow if needed.

her current i3 is a dual core, that i3's I linked is a quad core with better ipc.
If running mc now uses up a lot of her cpu utilization then no it won't improve much.
MC is heavy cpu usage being as its java based, some mods and texture packages are best handled with the gpu though.

If you're streaming something higher than an i3 would be advised

she's watching streams, not streaming content.

Okay. Would I need a mini 1050 as the mobo is a micro?

no, teh case i linked will support dual fan cards without issue.
triple fan cards may get tricky though.

Lol she wouldn't be getting triple but I appreciate the concern. Thanks for the help. I may PM you later with some additional questions as I get closer to purchasing.

just to clarify I don't mean triple gpu's but triple fan length, example below...

single fan

dual fan

triple fan

low profile - for compact cases (note how its slim vs otehr cards in reference to the bracket)
