The monitor caps at 120 fps though so wouldn't it need a bit more power?
My current monitor is 60 fps.
That monitor your linked is actually 144hz aka 144fps.

Update;
http://pcpartpicker.com/p/qTFfkLe; I went for the 1000w EVGA plat PSU but according to partpicker, as of now I only need 486w.
I am rounding this 486w to 500w and assuming I should be good with double that (just in case).
Is my OCD kicking in or am I right?
1kw is WAY overkill.
For 2 970 or 2 980's 750 is plenty
850 if you're super paranoid
Running mine on a Antec HCG 750w psu
doesnt even warm it up
Are you actually going to use the i7/16gb ram? Do you video/photo edit heavily? etc.

Under full load on +10% power each GTX 970 will cap out at 300 watts or so. The most power you'll need with two of those cards is 800 watts. Even then, you'd likely be fine with 750.
Also, I suggest you get a Corsair Air 540 rather than that Phanteks case. Further, you're not going to get much more performance from a 850 Pro over an 840 Evo. You're just paying an extra $60 for basically nothing. Can't imagine you'd need 16GB of RAM for anything either.
You're paying $60 extra for 8.1 Pro over 8.1 for features you won't use. In a home environment, you aren't going to need the extra network and management utilities like Group Policy or Domain Join. You also are clearly not going to need support for two CPUs or 512GB of RAM.
My motto is why even pay for windows in the first place ^_~
