Is there any discernible difference between the two? I'm planning on running a dual monitor setup and I have a 1920x1080 hdmi monitor and am looking at a 1920x1080 dvi monitor

For 1920x1080 no difference

Newer HDMI specs are much better than DVI though

for 1920x1080, the only difference is the ability to export audio. DVI has no audio capabilities whereas HDMI does.

Not true.
There is no quality difference since they are both digital. As long as the version is rated for the needed bandwidth.

I prefer Displayport > DVI > HDMI based on the securing mecanism.

Okay. Let's get technical.

Your standard DVI-D cable does not also come with an audio cable (3.5mm). DVI is a display interface only.

However, there are some out there that do, but with the addition of an adapter or an attached audio cable (3.5mm).
There are also DVI + R/L cables that basically take the digital video plus the left and right audio outputs, convert them into an HDMI signal, and then transmit both audio and video through an HDMI output.
