I bought an EVGA G3 650W PSU. I've never built a computer before but i found it very odd the way, the power connection for sata were created. 1 end goes into the psu but it splits off into 3 but like in a down upward zigzag pattern. is this normal? like even if i had 3 drives it would be very difficult to hook them up in a case using the cable. and plug them in neatly. the cable is super thick and not very bendy, super short length. is it ok just running 1 drive off it, and the other 2 splits not being used?

Yes that's fine to do :)
No reason that would cause any trouble.
