Yo guys, I'm looking for thoughts and suggestions on some new headphones since my Logitech G35's are busted up as fuck.

I'll use them for mostly shooters etc, so positional audio is a bonus but not essential, I'll also use them for my music etc

I can grab some Sennheiser HD 599's for 175 new, which means I'll need to buy a desk microphone

alternatively I could just buy another gaming headset, thoughts?

Yes, you are much better with real headphones and separate mic than any headset.
