If you are that worried about it then just don't connect to the internet.

Every platform fetches information. Android, IOS, Windows, Hell Linux does depending on the applications installed.

If you are that paranoid about it just don't use the product... or you know deal with it. It's not like you have anything that they would want to see anyways.

If you are worried about being spied on, using windows 10 is the least of your worries. Not only does it collect generic information, but it's collected from the masses.
