I've been running Plex, among many other things, from my server for 8 years+. I can strongly recommend using Truenas Scale for operating system. It supports docker through kubernetes and uses the zfs file system.
Other common choices are Unraid and Proxmox, but I don't personally have experience with those.
- use a supermicro motherboard
- if ddr4 or earlier, use ecc
- depending on use case, id say use minimum 32 gb ram
- use nas hdds, like WD Reds
- depending on use case, set up 1-2 drive redundancy (and consider if you need offsite backup)
- consider using a ups for those times your power go out, and for surge protection
- an ssd is very useful to host the plex docker on, for faster transcodes and snappier navigation/indexing
There are tons of guides out there on how to get started with truenas scale and plex. It's good practice to read/watch them to start getting an idea of how to proceed and to see if this is truly something for you.
If building the system yourself is out of the question, I'm sure you can also get prebuilt closed off walled garden crap that can host Plex too, like Synology or Qnap.
