Curious if anyone has experience running d2 legacy on any of: Ubuntu / Debian / AlmaLinux / Rocky Linux?

Interested in gauging how much of a pain in the ass it may be for someone relatively IT literate but unfamiliar with these operating systems. Looking to see if I can run legacy on a cheaper server OS.

It's available and actively maintained through Lutris, so I don't see why not. Albeit quite different, I ran D2R via Lutris just fine on both Arch and Debian a few years back on the game's launch.

Referring to legacy d2 not d2r if that changes your answer? From what I saw online I might need to install a windows OS skin type thing into my environment, to then run d2 legacy?

I don't have any experience running legacy D2/LoD on Linux, hence the "Albeit quite different". However, legacy D2/LoD is what I was referring to in regards to it still being actively maintained on Lutris. See: https://lutris.net/games/diablo-ii-lord-of-destruction/

I would recommend Lutris, too. I've used a few different ways over the years, but Lutris is the easiest/best/latest that I've used.
