Leather strops don't sharpen blades they strop the blade. Stroppong removes micro-burs left on the blade. Honing a blade straightens an edge back out. Sharpening a blade puts an edge on the blade. What's an 80 dollar stone when you have a multi-hundred dollar knife or knife set?

I've used several brands and qualities of water stones.

The 80 dollar one is by far the best one. Splash and go, doesn't load, doesn't dish quickly.

Will bug another one to replace it. Makes sharpening after service quicker, allows me to sleep more.


General food prep, now throwing in weird shit like piranha skin, amazon fruits and vegetables.

Lots of perfectly precise cuts. Leave it at 5,000 grit to leave enough toothyness for both vegetables and proteins.

Sand them FLAT again on rough concrete (non hard pan) or the side of a cement block...etc.
Wash it off and it's just like new.

I used to buy mine about 1.25" thick.

I use a DMT lapping stone. Easier on the fine grit stones.

Iirc I used 4000 grit, for my chisels and lathe tools.
Once I discovered water stones, I never went back.

I would still flatten it on rough concrete (non hard pan - non-shiny)


/e I liked water stones even better than diamond stones...gave a much better edge.
