Okay, the whole thing is set up and functioning perfectly. Only downside to it is that it seems to cap off @ 11.1 megabytes per second (which is like 90mbps in ISP terms) transfer which made transferring ALL my files (over 200gb) very long. Aside from that, it streams to all computers in my network without lag (1080p movies) and it is fucking beautiful.
I would post pics NOW but my mom jacked the camera from me ~ 2 days ago so I have no idea where it is. Waking her up now would be suicide, so I'll have to wait until she wakes up.
I ended up using Windows Vista Ultimate, moving the public folders from the C: drive (80gb wd Blue) to the R: drive (1.5tb wd Green) with help from Eek. Ubuntu had network issues (on board LAN wasn't working - the drivers were not supported), and my previous attempts at sharing the complete hard drive failed miserably on Vista.
Printer sharing works, so as far as I can tell this was a good investment! 
So far so good, next step is to clean out my closet... dead hookers take up so much room.

How are you transferring the files?
If you're using filezilla, it takes cpu cycles to encrypt/decrypt, making the transfers suffer sometimes. But over 100mbit connection I was getting a solid 12.5mb/s on a 3ghz athlon x2.
When on gigabit network I can only get like a 240mbit because my cpu can't process fast enough for filezilla; but through samba I get about 720mbit throughput.
