It does have to flow to them, it does not work like sonar. Smell is dependant on the receptors in the nose
picking up the smell. sharks smell like we do just much better, so if the scent doesn't travel to them they can't sense it.
They can sense blood on a molecular level though, only a few molecules is needed for them to detect it.
Even more so they know which nostril is picking up a scent stronger then another and can determine location.
Depending on breeds they can detect it from a mile away easily but its not several miles as others would have you believe.
Something more like 1-1.5 miles to be more accurate, things tend to disperse fast in water based on wind/currents.
