Although my instinct tells me that TJ Max =/= operating temperature and that you should generally be running much lower than the temp where the processor throttles/shuts down to avoid acute damage (TJ max)...

Not much I can do to dispute that if Intel backs this statement.... However I would say keep it 5-10+ degrees below 100c just because the temperature reading may not be perfectly accurate so a reading of 95c could actually already be 100.
70's/low 80's dont sound terribly bad for a gaming laptop, considering how much hotter they run than gaming desktops
