also I believe h1z1 uses a percentage of whats available, think that was discussed on reddit many times but I think 16gb would be safe bet, my system can idle just under 4gb with shit I have going on

DDR is double data rate effective speed is double shown in speccy
Dual channel means it have theoretical double bandwidth compared to single channel. It has nothing to do with the frequency the memory work at. Like quad channel is not 4 times the effective speed just larger bandwidth because the larger cache on the enthusiast chips can handle more bandwidth.

In real world performance there is a small difference between single and dual channel.
The effective speed between 800mhz and 1600mhz would be quite noticeable.

many benchers use single channel also for oc stability too

I do not, or ever worked in IT.
But I can judge this as wrong ...

@topic initiator, stay away from OC ..., imo, If u want to enjoy the potential of your 1070 video card, get new platform(latest gen. i5 and ddr4).

Lol worse advice ive seen in a while op doesnt need spend 400$ overclock will help till he actually needs cpu upgrade

Stay away from OC and buy an i5 so close to ryzen release...
