You can open a jpg or mkv over sms and get infected.

Most exploits of that nature are more likely sold/used for jailbreaking iDevices rather than used to make zeroday keylogging/malware targeting un-important people or spamming it to gen public, as it will just be patched by apple in the next update.
But most people don't realize 90% of personal data leaks are from services like iCloud, such as the fappening, but even those leaks targeted celebs and such.

tldr jailbreak if u know what ur doing, and dont use icloud/non local backup services.

You say they wouldn't target unimportant people. But if they casted out a "net" of sorts and ended up infecting a couple people, could they not record their 'key strokes' and steal their credit card info if someone bought something online?

Zeroday exploits capable of jailbreaking an iphone or keylogging it will not be "casted out a net" of any type... that would limit it's zeroday angle as it has a higher chance of being detected and patched before it can be used on a target or sold to a company.
