It's not ran yet it's a brand new home I have less than a Week to make decisions and order things before the guy is out here to start working

I would find a local "data distribution" company and get their recommendations.

Just think of all the offices in your location that have to be wired, more or less, like you are doing. To get the data from one central location to say.... 15 office cubicles.

The guy has given suggestions already so I have what he suggests but I am the kind of guy that likes to grab knowledge from all resources available and see which points they agree on to lead me to my most informed decision. So I have our guys suggestions now it's just me trying to decide what's best. I'm paranoid by nature, at the very worst I take the guys suggestions and move ahead either way I have a week to change whatever

well I doubt anythign you own can use a 10gb line nor will u ever get a 10gb service so stick with cat 5e (1gb)
Like I said its half the cost if not less.

I understand but my concern isn't with the cable being ran though it was just about what method is best to accomplish a neat, organized, and efficient way to hardwire my home.

I have no issue with doing cat 5e if it's half the price.
