If MIDI is your only form of output, is that going to be alright for quality? And is that going to work with programs for everything?

midi will give you incredible versatility in terms of playing aorund with it with audio software but there's something about hard acoustics that you can't capture via midi, and i'm not a huge fan of it. i mainly use midi as backing for instrumentals

The quality of the midi comes from whatever software you'll be using.

You can midi that sounds like junk and some midi that you can't even tell that it's fake.

I highly recommend Native Instruments for midi samples for piano/synth/strings kinda stuff. I have some of their samples and they are amazing and for such a good price.
And yes it'll work with all DAW programs.
