I'm confused as to what size cab I should get. Beforehand, I was considering a 4x12. But then I wondered... If you're going to be mic'ing it up, wouldn't a 1x12 or 2x12 be enough?

my buddy from a band called redlefty mics a single 12" and it works great. plus its less for him to load in/out. (especially since he plays upright bass)

as long as your 2x12 or 1x12 has the greater wattage than the amp and the ohms match it should be fine

Does the sound differ between 4x12s and 1-2x12s (assuming they're the same brand cabs)?
