I'm almost positive that it doesn't matter which side you start from. Just make sure that you only change one string at a time (meaning, don't take them all off at once). I usually see people starting from the fattest strings to thinnest, so do that.

why cant you take them all off at the same time? does it have to do with keeping tension on the neck?

and i normally go thickest to thinnest

Yes the neck will lose tension and also, if you have a floyd rose it'll be a pain in the ass to re-adjust the bridge.

But mainly because of the tension ;)

Oh and on topic, I usually go from thinnest to fattest
