As alot of people said in here, there is no such things as "best drummer", depend on style and etc.
But for metal, here's my top 3 :

1) George Kolias (Nile)
2) Dave Suzuki / Tim Yeung (Vital Remains)
3) Gary "weredog" (The Berzerker, on album "Dissimulate" only)

For jazz, buddy rich is a beast.
