I just found one for that exact song I was looking for! :O W00t! That made me happy... Heh.

Now, this one is just for the whole instrumental. Is there ever backing tracks of individual instruments or does that not usually happen?

It won't be called a backing track anymore I guess.
But each single part of a track can be found and taken appart from a tablature / sheet music via such programs: Guitar Rig 3 / Guitar Pro 5 / PowerTab 1.7 / Guitar Editor where you'd be able to mute either the vocal (which usualy is converted into piano/violin on this kind of file :( ) either the drums for example. Sound definition will mostly depends on your program's bank sounds/plugin and on your soundcard.

Here is a GP5 demo

Unless the band is willing to give you their masters, which they aren't, then you're SOL. You're better off making your own music anyway, instead of stealing someone else's.

No one is stealing anything. I would suggest you know what I'm even doing before accusing me of something like that. ^_^
