Reaper is your best bet. Basically you can download a fully working version from them, they call it a trial version, but everything works. The only thing that makes it a triel version is that everytime you open it it will ask you to buy it, but just wait 3 seconds and click cancel and your set.

It does not accept VST plugins, reaper does and has a much better interface than audacity as well as much more effects.

These are more oftenly referred to as sequencers.

PC - Cubase
Mac - Logic

Both are not free, but they are very easy to find cracked if you search around. Logic is the better of the 2, but it is only released for macs.
