Well, there's nothing wrong with doing a parody of a comedy - nothing at all. Comedies can still be worth a parody.

In fact, I even laughed hard about Date Movie in the cinema (though the fun was gone when seeing it twice on dvd).

The problem is way easier: There is no genre which is cheaper than the parody - you earn _damn_ much money with them, and there is no risc that you'll loose money - for you had nothing to spend.
You don't have to think about a story or stuff yourself, you do not even need famous actors or whatsoever.

Therefore there are just too many parodies made in short time - which _must_ end in bad movies.

If someone would try a big-budget-parody of famous comedies, it would work as well and could be hella fun.
