I am pretty good at farming for dex, speed, and wisdom pots.

Looking to start doing some abyss runs but could use some help.

Those listed above are the only characters i have that "Could" be strong enough to start running them, though i am fairly scared to try it.

i'd recommend a meelee class to start learning abysses, from those listed, priest or rogue are better suited probably.

I'd go rogue if those are indeed the only classes you have built atm.

You can tip-toe behind your cloak.

Otherwise, I'd get a knight together and rock out with that. You can tank a huge amount of damage in there with them and the shield's going to help you contain groups.
