Correct. Skills are predetermined when you hatch
common and
uncommon eggs. If you find a rare tier+ egg and hatch it, it's abilities are completely random. There are some common eggs that you can hatch, and will have randomized abilities too, for example the peppermint snail from candylands, and a demon frog egg from abysses. Those are "rare" tier but they drop as common eggs. I know it's weird.
You can check "family" if you are looking for a certain pet or "first ability" to find a pet that can get whatever ability you are looking for. Some families are easier to get heal/mp for the first two abilities than others. The hatching simulator just shows your chances of getting the pet you want within different pet families. The fusion simulator is useful to see where your pet would on the 2nd or 3rd abilities, say if you decided to chose the "max the first ability" route to unlock the max level and not completely max both abilities on your pets.
Sprite change is completely random. There is nothing you can do about this.
As far as fame farming goes, I don't really like going over 230 base fame with a 0/8. With 11% total fame items you can get a flat 700 fame if you do this and get the thirsty, mundane, all the god kill bonuses, all the accurate bonuses, and don't kill any cubes. If you join a fame train in euw2 it takes about an hour or less if the train is decent. For me this seems the best way to gain fame. Anything after 230 is kind of pointless imo unless you are looking to gain stars. The fame gain starts to slow down considerably after that. Here is a handy tool to give you an estimate on your fame with certain bonuses (I believe the creator also uses jsp):
