What are the odds of getting at least 1 GA on a crafted uber unique? Do we have any info on this?

based on personal experience like 10%

14 uber uniques crafted so far and none had any GA... sample amount is 2 low though for any decent statistics.

Probably the same odds of getting a GA on any other single item... Low, but to make matters worse you will rarely craft Uber uniques so way less chances.

there is a pity mechanic when crafting ubers which involves petting the cat/dog, see Robs video you should get 1 out of 10 as a GA when crafting.

That's just like blowing on the dice, it doesn't actually do anything.
