The professions actually don't really matter too much; it's all about what you want to do.

On my consular, I went artifact + archaelogy/treasure hunting, that way I could make my own hilts+enhancements+crystals.

As long as you get the proper gathering professions, you can go whatever crafting you want. :)

It all depends on what you plan on doing; for me, I PvP a lot, and most of the end-game gear comes from vendors. Because of this, although I could go synthweaving to make my own gear, it would only serve a purpose in leveling.
Also, the deficit in gear could be made up for in appropriate mods; if you have orange gear, you can just find (or go) cybertech to keep your gear current (even for your end-game gear).

It's honestly all up to you. The only thing I wouldn't recommend not doing would be going something like armstech. Most of those crafted items are for non-jedi classes.

Pretty much that. ^ I would recommend slicing on your first toon or at least while you level.

just read through your codex says what they all do and the suggested professions to go along with it.
