I went a little mod crazy and downloaded a whole bunch. Please let me know what I am missing.
I am not looking for ones that effect game play too much, as you can see from my list.

A quality world map - with roads
Enhances blood textures
Enhanced distant terrain
Enhanced night sky
Footprints
Glowing Ore Veins 300
Improved NPC clothing
No more blocky faces
Skyrim flora overhaul

Realistic Skyrim Textures, or Skyrim 2k textures. (Both exist in smaller res, if you have an old GPU).

I have the official high res pack dlc, should I still get either of these?

I don't know about best, but some fun ones were monster mounts( of course you probably wont want to leave this on all the time, but its fun to mess around with)
alternate star- live another life (pretty minor, but still kinda cool)

joOsSkyrimKnighly armory(basically just some kick ass Templar/paladin/knight based armors)
and of course the Immersive armors
