Wolf!

Wolf kind of winning in my head too.
I think barb might be much easier with 2 weapons and Find Item. Gives more chances of finding rares by find item / gamble
Wolf sounds challenging

Paladin - easiest. Can get high damage and good survivability. With Zeal and level 20 Fanaticism you will only need some IAS gloves to be at 5 frame attack speed using a Berseker Axe. You could even put an Um or Ber (if you find one) in a weapon, since you won't really need IAS.

Barbarian - medium. Survivability is decent with warcries and Natural Resistanace. Getting 2 high damage rare weapons will be hard to find, getting a high damage 2 handed weapon should be achievable. Whirlwind/Zerk will do enough damage, but you'll need to find IAS weapons or Shaels.

Wolf - hard. Survivability will be ok, Lycanthropy adds a lot of life, resistances might be hard to get. You will probably want to use Wolverine to get the attack rating and damage boost. You will need to find a weapon with sockets or 30/40 IAS on a decent WSM base, this will be very hard, especially finding an eth/rep or high damage roll.
