Also what character would you say I start off with? I started a barbarian due to being tough but hell i put i on p8 and went into Den and got raped by some charging horn mobs...

It's hard to know without even knowing what high level gear looks like, but I think barb might struggle a bit because all barb skills deals physical/magic damage only .. afaik no decrep nor amp can break it, even in norm.
keep in mind normal white monsters can randomly have 1 immunity, any of them. A lot of bosses are 2-3 immunes.
In hell white monsters have their natural imminuty (lets zombie has cold) + randomly another one (or not). I think bosses there can have 3 or 4 immunities so you see the problem.
I would try necro, because nec can have a large choice of good elements combined, such as magic + fire/physical with only 2 skills, CE and BS.
which would gives a lot of flexibility. I think assa could do pretty good that way too
