what's a good way to deal with them? i'm replacing the deck in my car so i can't do the normal tricks like hitting the surrounding area with a torch/hitting it with a hammer/drowning it in fluid

Use a Dremel with a cutting disc to cut a slot in the head of the screw then use a flat tip screwdriver.
