If you're saying something own's something then you use 's so if Jake owns a skateboard you type Jake's skateboard.

'Yesterday's' is the posessive form. The news belongs to yesterday. Yesterday's news.
'Yesterdays' implies there are multiple instances of yesterday.
So the former.
