Once i download Everest, is there a certain piece of information i should report back here?

Start Everest, select Display --> PCI / AGP Video --> Here should be a precise name of your graphic card.

Everest ultimate is apparently discontinued, and its successor is AID64. Any idea how to navigate this software?

No, I don't - it's not really widespread, yet. But you can still find plenty download links to Everest Ultimate through Google.

Under the Display --> PCI/AGP Video section, it says my Device Description is a Virtualbox Virtual.
It appears as though my virtualization software is acting as the graphics card?

Other potentially useful information:
Under DirectX --> DirectX Video, i have a few things
-DirectDraw Driver name: display
-DirectDraw Driver description: Primary display driver
-Hardware Driver: vga.dll (6.1.7600.16385
-Hardware Description: Standard VGA Graphics Adapter

Seems like Everest can't identify your graphic card because you are running Windows virtually.
Now, I can only suggest you to install the Mac version of Diablo 2.
