Okay I have the Samsung infuse 4G which came with a HDMI adapter to watch my movies on my phone on my tv

now the videos I buy on my media hub CANNOT be streamed to my TV

If I buy movies on ITunes can I put them on my phone? Or would the format be different? Also which format do itunes movies download in?

I am not sure the exact details but on my HTC Evo 4G, I can HDMI YouTube and Gallery but I don't know of anything besides that. If you are rooted however, you can HDMI your entire phone in any app or none at all.

There are video player apps in the Market that play almost every format. Rockplayer is one for example.

You can copy any media file to anywhere on your phone/SD card, then use a file explorer (ES File Explorer or Astro or whatever) to open the file, it will ask you what to open it with and you should choose whatever app can play it.

Another solution of course is to convert files on your computer ahead of time.

As Forsaken said try and convert it, I am sure when you buy it and it says save it should ask you in what would you like to convert it, so then switch to one which is compatible with your samsung, either way at the end you can find programs that switches it for you, so don't worry much about it.
