I don't know much about professions, this is all I really know:
Alchemist
Creates special potions
Disassembler
Disassembles items for materials
Animator
Creates APCs for battle
Enchanter
Enchants equipment using monster cards

Now, I had accidently spam clicked when I was accepting quests and took the Animator as my profession, From what I see this is NOT a profession I will be able to make money off of, like Disassembler for instance.
Is this a profession that you want to acquire later on, when you have a fat money stack?
For the cost of 1K gold, I can abandon my profession and pick up a new one. No big deal...
