I love ramen and have already tried a few, which is why I want to share THE RAMEN recipe with you
its fresh, its healthy and its vegan. for non vegans, you can add a classic half-boiled egg.
broth:
1 large onion
70 grams carrots
40 grams celery
2-4 cloves garlic (if you are not rly a fan of it, just use 1)
15 grams ginger
5-6 tbspoon tamari soy sauce (its a bit thicker than normal soy sauce)
2 tbspoon sambal oelek
1.5l vegetable broth
2-3 kaffir lime leaves (depens on your taste)
2 shiitake mushrooms
2 tbspoon miso paste
50 grams soy cream
To fill up:
200 grams ramen pasta
200 grams green asparagus
100-200 grams pickled seitan
200 grams sesame-almond smoked tofu (its not necessary but tasty. if you cant find one, you can make it yourself with a plain tofu)
70 grams of zucchini
50 - 80 grams pak choi
half-1 spring onion
some sesams seeds
chop onions, carrots, celery, garlic and ginger and sauté in sesame oil. After 4 minutes add the sambal oelek and saute. After another 2 minutes, deglaze with the soy sauce.
After the soy sauce has simmered a bit, deglaze with the vegetable broth. Add the shiitake mushrooms and kaffir lime leaves and simmer over low heat for about 60 minutes.
Add the miso paste and simmer for another 5 minutes. Then leave it to rest overnight or atleast 2 hours.
The next day/or few hours later, bring the broth to the boil, refine with the cream and pour over all the toppings.
*instead of ramen pasta, you can make yourself pasta out of zucchini
*sesamseeds are not everyones favorit. instead of sesamseeds you can use sprouts.
