It's been about 6-7 years since I made them,

Would appreciate a quick run thru with possible any interesting twists to it.

Funny you mention this. There was a guy on jsp here who made a video ... I hope someone can help me remember the name.
Of this pancake tutorial.
It was honestly quite good he talked about the heat and the pan and tricks to keep the pan a level heat.

1 c flour
1 tbsp supar
1 tsp baking powder
1/4 tsp baking soda
healthy dash of nutmeg

mix

add 1 egg
1 c buttermilk
1 tbsp vegetable oil

mix

add splash of milk if necessary to soften batter.

Makes about 10 of the most moist, delicious 4" pancakes you've ever had. Use hot cast iron.

2 bananas and 1 egg.
Mix together
Medium heat skillet

If you like crepes you'll love these.

Top with a splash of maple syrup, jam/jelly, fresh fruit, or just eat as is.
