Hey y'all 💁

Gumbo down here is a family tradition that almost everyone enjoys. It's origins come from poor people that would just throw anything laying around in a pot. But deep in the swamp a few recipes stood out among the others. One of those being "filé Gumbo". Filé is ground sassafras root and a swamp spice.
Here is a guild to making it. But remember that you can alter ingredients to suit your own taste.

It's best to have a good big pot, due to all the people that will want some once it's cooked. :P


The most important part of the whole thing is right in the beginning. You will make a roux. Put in oil and heat it up, then add flour.

Make sure to continually stir the rue so it doesn't burn

It takes about 10 minutes so be patient

While stirring the roux or even before you get started, it a good idea to chop up all of your ingredients

Green onions, regular onions, bell peppers, celery

All this is delicious seasoning. The onions and celery and pepper. Mmmm.

Stir it good! But be careful. I spilled stuff all over my sweater and had to change shirts :blush:

Continue to cook the seasonings down on a med to low fire until they get soft

Now it's time to trim the fat from your chicken

About now the veggies should be cooked down and we can add the sausage and ham

Remember to always keep stiring and don't let this first part burn

Now we can add water about 3/4 of the way in the pot

Add seasoning lime salt and pepper and whatever else you want as you go along.

We like to throw a few Bay Leaves in there for taste and cuz we have a tree across the street

i personally don't like chicken and sausage gumbo i prefer seafood but this still looks tasty. you should put a paragraph in the beginning saying how much of each ingredient

We literally have jars of them

Dang it smells good in here

Now we can let all that heat up for a bit before we throw in the chicken
