Left uncovered in the refrigerator for 20 hours to help dry it, than brought to room temp. Seasoned with kosher salt, cypress black salt and butcher cut pepper.

Roasted at 550 for 15 minutes, than down to 325 for 2 hours.. Rested for 45 min until the veggies and yorkshire pudding finished. Turned out perfect.

looks more like medium in the center to well done on the outside. maybe a bit of med-rare only in the very center.

next time, cook it low n slow, like 225 for longer, like 4-5 hours, or til it reaches temp. the doneness will be much more even throughout.
