I'm looking for something that doesn't rise too much, I like a nice thin, crispy crust. All the store bought ones rise a lot.

i havent tried this yet but it's on my todo list:
self raising flour (no yeast) and greek yogurt

Alton Brown's pizza pizza recipe. Check on foodnetwork. Awesome, trust me. You need stand mixer though

We use lavash flat bread. Crisp it a bit then put toppings and cook another 10 mins or so

Not as much yeast and round out your dough. garlic is great in the dough and also cheese crust is awesome.
