So yeah recently i've quit my executive chef job in a big french restaurant in Montreal... Right now i'm in China with my wife (she is chinese). I have a working holiday visa (americans cant get that one ahah :P.. basicaly you can work anywhere for 1 year) but since she's chinese she need a different visa so she should get it this summer. I'm gonna try to work in a 2 or 3 michelin star japanese cuisine restaurant (no sushi though).. or if i can't i'll go work in a 2-3 star french restaurant... Should be good experience :)

Wanted to edit but was too late....
So yeah i really love japanese cooking and wish to learn more about it.. i love to mix french and japanese in my cooking style..

I've been working on my application to do a stage at "Noma" in Denmark. But during a the winter and I believe fall seasons, the staff goes to Japan and their restaurant there is open during those seasons. That's so cool you get to work overseas.

Hmm Noma is only in Tokyo for 2 or 3 weeks.. i think it's over already...

do you or your wife speak japanese? my wifeys parents went there and they found it very difficult just due to the fact that finding ppl that speak english over there hard to find hehe

depends on where you go i know quite a few people that live in japan as long as you can kind of speak the basic words you're generally set a lot of them speak english quite well in fact not sure where your parents in law went.

any chance you know how to make a fruity red bean paste for mochi? i see a lot of recipes for regular mochi, but i'm not sure how to incorporate fruit flavours
