There is like this brownish shit looking stuff near the ass of the turkey and in the pan I used to cook the turkey.

Is this normal? Did I cook turkey shit?

I removed the like bag of turkey insides from the bird and some organ and shoved my hand up there and did not feel anything else.

Its probably cooked blood that came out of the bones. The center of the bones have a lot of blood in them. When the bones get cooked the blood turns brown, expands, and drips/foams out the cracked or cut bones.
