The recipe and how to make it can be found here: http://www.myrecipes.com/recipe/red-velvet-cheesecake

I've made the cheesecake following this recipe twice now. The second time I chose to use green food coloring instead of red. I think the recipe is pretty good and the Cheesecake turns out pretty well. I would like to give the cheesecake itself a little more flavor (something sweeter perhaps?) and was wondering if anyone has some suggestions on how to adjust to recipe to give it this sweeter taste.

I'll update with some pictures sometime tonight when I get off of work with the finished results.

1 1/2 cups chocolate graham cracker crumbs
1/4 cup butter, melted $
1 tablespoon granulated sugar $
3 (8-ounce) packages cream cheese, softened $
1 1/2 cups granulated sugar $
4 large eggs, lightly beaten $
3 tablespoons unsweetened cocoa
1 cup sour cream $
1/2 cup whole buttermilk
2 teaspoons vanilla extract $
1 teaspoon distilled white vinegar
2 (1-ounce) bottles red food coloring

1 (3-ounce) package cream cheese, softened $
1/4 cup butter, softened $
2 cups powdered sugar
1 teaspoon vanilla extract $
Garnish: fresh mint sprigs

if i'm reading that correctly, the filling is just a normal cheesecake with 3 tbsp of cocoa powder?

a few things i'd try:
1) replace a bit of milk with sweetened condensed milk
2) replace cocoa powder with some melted sweetened chocolate, or maybe nutella
