Anyone have any good trout marinades/recipes that I could try out?

First day of trout season Saturday and I'm planning on getting some trout to eat :)
I have my own that I usually do but I'm looking to expand my options!

Everything is appreciated.

1/2 c. unsalted butter
1 T paprika
2 1/2 t salt
1 t cayenne pepper
3/4 t white pepper
3/4 t black pepper
1/2 t thyme
1/2 t oregano
1 t onion powder
1 t garlic powder

Preheat large, heavy skillet until very hot. Combine paprika, salt,
onion powder, garlic powder, cayenne pepper, white pepper, black
pepper, thyme, and oregano in a small bowl. Dip fillets in melted
butter, then in seasoning mixture. Place in hot skillet and cook
2-3 minutes on each side until blackened.

c. = cup
t = teaspoon
T = tablespoon


this is a blackened trout recipe i use and cant wait for Saturday either

O no I do not eat fish but my father inlaw made fryd fish with shake n bake but I I was u I'd fry it in soy sauce

I like the blackened recipe. I've had a very similar Cajun blackened trout recipe.

Also found this! Figure adding bacon makes everything better. (lol)

At the restaurant I work at, we try and treat it as simply as possible. Especially when its freshly caught like in your case.

I personally like to season it very simply with olive oil, kosher salt, and fresh black pepper. I sear it in a hot pan to get the skin crispy, then throw a few slices of lemon and a few sprigs of fresh rosemary on it and let it finish in the oven. We serve ours at the restaurant with a caper sauce or a bur blanc.
Or if I'm cooking it whole, I like to stuff it with lemon slices, a little garlic, fresh rosemary and roast it. Or maybe some dill.
